How to Make Pepper Soup (Perfectly) 

Before we jump into how to make specific types of peper soup, I want to give you the general overview of the ingredients that make up pepper soup. So you can mix and match to come up with endless perfect peppersoup ideas.

Now to make pepper soup you need two (2)to five (5) broad ingredients types, they are:

1. Pepper Soup Spice Mix

The main idea is pepper soup should be “spicy” hence the name Peppersoup. 

So therefore, an important and essential part in nailing your pepper soup is the peppersoup spice. 

A typical peppersoup spice is a blend mix of these spices:

  • Ehuru (Calabash nutmeg), 
  • Uziza seeds (Black pepper) and
  • Uda (negro pepper). 

Ready-made Pepersoup spice mix is widely available in your local stores. So you don't always have to make it from scratch.

2. Protein Source 

To make peppersoup, another essential ingredient is a protein source which includes: 

Goat meat, chicken, catfish, other fishes, Lamb, seafood, oxtail, bush meat and assorted meat (i.e different parts of a cow like the kidney, liver, plain beef, cow tripe, intestines e.t.c) can be used.

3. Other Spices {Optional}

There are other spice ingredients that aren’t necessary but can be added according to preference or taste. They are smoked paprika powder (it gives it a reddish look), ginger, garlic, palm oil, crayfish and so on.

4. Carb Source{Optional}

There is also the option of adding carb sources like yam, plantain, potatoes and more that have been nicely diced in smaller cubes into your pepper soup to add versatility into your bowl of pepper soup.

5. Garnish {Optional}

For garnishing, any of the vegetables like Uziza leaves, Utazi leaves, scent leaves (Effirin), basil leaves, mint leaves and parsley leaves can be used.

Ingredients:
  • 1kg of Goat Meat 
  • 1 tablespoon of Pepper soup spice mix
  • 2 Teaspoon Ground Hot Chilli Pepper/ 1  scotch bonnet or habanero pepper (Chopped To Bits).
  • 1 teaspoon of Ginger
  • 1 large onion
  • 3 seasoning cubes
  • Salt to taste
  • 1 tablespoon of ground crayfish [Optional]
  • 2-3 finely chopped scent leaves (Effirin)
  • water
Directions: 
  1. 1
    Cut your Goat Meat into smaller chunks and thoroughly wash.
  2. 2
    Put cleaned and cut goat meat into a pot and set on slightly below medium heat.
  3. 3
    Add 1 cup of water, 2 Seasoning Cube (e.g Maggi), ginger, garlic, onions and some salt
  4. 4
    Cover pot and allow to cook for about 1 hour 30 minutes (or until meat is soft). Then remove pieces of ginger and garlic from the pot.
  5. 5
    Add about 4 more cups of water to the pot of cooked meat. Also, add in your pepper soup spice, chilli powder/copped peper, crayfish and one more Seasoning Cube (e.g Maggi).

    Mix thoroughly and taste. Add more salt if needed.

    Cover and allow to simmer for about 20 to 25 more minutes

    Turn off heat and Serve!

  • If you don’t find the garlic in the precooked meat, then no need to worry. It simply means it completely melted in the stock.!

    Set a put on medium heat. Put your cut catfish into a pot and add in water to reach the level of the contents of the pot.

    Also, add in your pepper soup spice mix, onions, pepper, seasoning cube, salt, ground crayfish and Bitter leaf (or Utazi).

    Cover pot and allow to simmer for about 25 minutes.

  • For a more thorough wash of your fish, add lime to water to be used in cleaning the fish.
  • The above steps is how you make any other type of fish peppersoup
  •  Do not cook the fish for too long and avoid stirring more frequently so the fish doesn’t break apart. A technique that can be used to avoid your fish from breaking apart is pouring hot water over the fish, allowing it to sit for 30 seconds before draining out the hot water and then rinsing under a tap.
