How to make Nigerian Fried Rice (Classic)

Here's how to make the Classic Nigerian fried rice using 3 different methods

Ingredients:
  • 2 cups of long-grain rice or already cooked white rice/basmati rice
  • 1 small bowl of mixed vegetables (i.e carrots, sweet corn, sweet peas etc.)
  • 1 cup of pre-cooked chopped cube-sized beef liver
  • 2 tablespoons of coconut oil or any oil of choice
  • 1 teaspoon of curry powder
  • ½ teaspoon of dried thyme
  • 1 medium onion
  • ¼ teaspoon of white pepper
  • 1 knob of butter (optional)
  • 1 seasoning cube
  • Salt to taste
  • 1 bay leaf
  •  3 small minced garlic cloves (optional)
  • ½ cup of chicken stock
Directions (Method 1): 
  1. 1
    Measure the rice into a bowl and wash thoroughly to get rid of the excess starch that might cause the rice to gum together. In a large pot, parboil your washed rice with your chicken stock and/or water. Allow to cool
  2. 2
    If using an already cooked rice, boil a little quantity of the chicken stock then add your rice to soak up the flavour in the stock and allow to dry.
  3. 3
    In a large pan, add your oil on low - medium heat and sauté your onions till it’s translucent. Add your mixed vegetables, dried thyme, curry, seasoning cube and salt and stir-fry for about 2-3 minutes.

    Add your rice, mix into the vegetables and seasoning while frying. Add your cube-sized beef liver and stir-fry for about 3-5 minutes.

    Take off heat and food is ready. It can be served with chicken, shrimp or goat meat. Can also be accompanied with Salad.

Pro Tip: Because cold or really cool rice is preferable ( this is because it removes all the moisture that might make the rice mushy), in step 1: you can either place the rice in the refrigerator for a couple of minutes or place on a tray to sit for a while.

Directions (Method 2): 

This method is pretty easy. It’s making the use of an instant pot or pressure cooker.

    In the inner liner of your instant pot or pressure cooker, throw in your rice, chicken stock, cooking oil, mixed vegetables, dried thyme, curry powder, salt and stir to mix.

    Allow to cook on high pressure for 4 minutes. Then let it sit undisturbed for 5 minutes then cook for the remaining 26 minutes.

    Gently stir in your pre-cooked cube-sized beef liver. Cover the pot with the lid and let it rest for about 5 minutes. Food is ready.
Directions (Method 3): 

This method is inspired by Nigerianlazychef’s kitchen.

    Measure the rice into a bowl and wash thoroughly to get rid of the excess starch that might cause the rice to gum together then drain.

    In a large pot on medium heat, pour 2 tablespoons of cooking oil and bay leaf, add your rice and stir-fry for about 3 minutes. Add curry and mix together then add your chicken stock just above the level of the rice and cook till it’s al dente (not too hard, not too soft). Once it’s done, refrigerate or place on a tray for an hour.

    In a large pan or wok on high heat, add 1tbsps of oil, pour your cube-sized liver and fry till golden brown. Set aside.

    Then heat up another 1½ tbsps of oil and sauté your onions and garlic till translucent and the fragrant of the garlic is infused.
  5. 5
    Then, stir-fry your mixed vegetables, add dried thyme, curry, seasoning cube, white pepper and a little salt. Stir in the seasonings into the vegetables for about 2 minutes then throw in your liver.

    Add your rice in increments and mix thoroughly for the seasonings and mixed vegetables to come together then stir in your butter. Remove from heat and serve.

Notes: 
  • In making fried rice, the way the rice is prepped or parboiled depends on the type of rice. If using basmati rice: for every 2 cups of rice, you add 3 cups of stock or water to boil and if using long grain rice, the recipe below would need 4 cups of stock or water.
  •  It’s advisable that a day old rice or cold parboiled rice is used in making fried rice.

Ingredients:
  • 1½ cups of regular long-grain rice
  • 1 can of coconut milk OR 2 cups of home-made coconut milk
  • 1 tablespoon of coconut flakes (optional)
  • ½ cup of mixed vegetables (i.e carrots, sweet corn, sweet peas etc.)
  • ½ teaspoon of turmeric (for colour)
  • 2 tablespoons of coconut oil
  • 1 diced habanero pepper
  • 1 teaspoon of chilli powder
  • 1 small white onion
  • Salt to taste
  • 1 cup of chicken stock
Directions (Method 1): 
  1. 1
    Wash your rice till the water runs clear then drain.
  2. 2
    Then, in a pot add your chicken stock and coconut milk and bring to a boil for about 2 minutes.
  3. 3
    Add parboiled rice, salt, diced habanero pepper and allow to cook till the liquid is dried up. Stir in well.
  4. 4
    In a large pan, heat up 2 tablespoons of coconut oil and sauté onions till it’s translucent. Add your mixed vegetables then your chili powder, turmeric and a little salt. Mix properly to get the seasoning infused into the veggies.
  5. 5
    Add in little increments, your rice and stir-fry for about 5 minutes. Remove from heat and serve.
Directions (Method 2): 

This coconut fried rice can also be made in the oven:

  1. 1
    Preheat oven to 400 degrees
  2. 2
    In a roast pan, add your parboiled rice or basmati rice, chicken stock, coconut milk, habanero pepper and salt. Mix together properly. Cover with an aluminium foil and place on the lower rack of the oven.
  3. 3
    In a large pan, heat up 2 tablespoons of coconut oil and sauté onions till it’s translucent. Add your mixed vegetables then your chilli powder, turmeric and a little salt. Mix properly to get the seasoning infused into the veggies.
  4. 4
    Check the rice in the oven for doneness and when done (that is all the liquid is absorbed and the rice is soft), mix your stir-fried mixed vegetables, cover with a foil and allow to rest.

  • A handful of sliced smoked fish

  • Chicken or beef stock
  • Seasoning cube (s)
  • Salt to taste
Directions:

    Wash your rice till the water runs clear then drain.

    In a pot, add your rice and stock (beef or chicken) with the smoked fish and cook till it’s done.

    In a large pan, add your cooking oil and sauté your onions till it’s translucent then add your ground crayfish, diced vegetables, seasoning cube, salt and dry pepper and stir-fry for about 2 minutes.

    Then, in little increments stir in your rice and mix properly to incorporate the vegetables and seasonings for about 3 - 5 minutes.
