Ingredients for sausage roll dough - 250g of plain flour
- 120g of cold unsalted butter
- 1 teaspoon of baking powder
- ¼ teaspoon of salt
- 1 tablespoon of sugar, optional
- 10-15 tablespoons of cold water or as needed
- 1 egg, for egg wash.
Ingredients for sausage roll filling- 200g of ground pork meat
- ½ teaspoon of black pepper
- ½ teaspoon of ground nutmeg
- ¾ teaspoon of minced garlic or dried coriander leaves, optional
- ¼ teaspoon of salt

Directions: 1 With the aid of a food processor or fork, combine your pork meat, black pepper, minced garlic or dried coriander leaves, salt and ground nutmeg. Set aside.
2 In a large bowl, add your plain flour, baking powder, salt and sugar. Mix with your hands or spatula to combine well.
3 Add your cold butter and mix thoroughly with your hands to get a crumbly texture, just like breadcrumbs.
4 In little increments, add your cold water and mix well. Keep doing this till you get a non-sticky dough. Place on a lightly floured surface and knead for a couple of minutes. DO NOT OVERWORK YOUR DOUGH then allow your dough to rest for about 30 minutes.
5 Break and whisk your egg then set aside for later use (egg wash).
6 Preheat the oven to 200 degrees Celsius or 400F.
7 Get out your dough from its resting place, place on a lightly floured surface and divide. Roll out the portion of dough cut out with a rolling pin till you get the thickness you prefer and a rectangular shape.
8 Place your sausage meat on the dough, fold then seal with your egg wash using a pastry brush. Repeat the process till your dough has been exhausted.
9 Place sausage rolls on a baking tray lined with parchment paper or aluminium foil. Make a few holes or cuts with either a fork or knife on the top of your sausage rolls and brush with your beaten egg ( Egg wash).
10 Bake sausage rolls in a preheated oven of 200C (400F) for about 25 minutes or till golden brown.

Notes: - For good quality dough, it’s advisable to use a butter with high fat content OR mix both butter and margarine in the proportion of your choice OR can use only margarine.
- Always use cold butter
- I’ve also noticed that there are “should be there” spices added to the meat of choice. They are: Black pepper (or any type of ground pepper), Salt, Nutmeg, Breadcrumb (This is applicable when using ground beef. Reason being to soften it.) and any other herbs or spice of choice like garlic, ground coriander etc.
