How to make Nigerian Scotch Egg ( Deep-fried Method)

Ingredients:- ¼ cup of all purpose flour
- 4 medium eggs
- 500g sausage meat
- 1 cup of breadcrumbs or any other alternative
- 1 egg, beaten
- 1 teaspoon of salt
- 1 teaspoon of dry chilli pepper
- Any other herbs and spices, to taste
- Oil for Frying

Directions: 1 Add your eggs and water enough to cover your eggs into a pot, place on medium heat and boil for about 8 minutes or longer depending on preference, from runny yolk to hard-boiled egg.
2 After which you allow to cool by placing under runny cool water, peel then set aside.
3 In a bowl containing your sausage meat, season according to preference and mix together with the aid of a fork. Sausage link can equally be used; just remove wrapping and mash in a bowl.
4 Then in three separate shallow bowls, beat your egg in one, Measure ¼ cup of flour in the other one and pour your bread crumbs enough for coating in the last bowl.
5 Coat your boiled eggs in flour (to prevent it from getting/being slippery on the hands) and wrap in sausage meat.
6 Roll/Dip your sausage-boiled eggs in your beaten egg and then coat with breadcrumbs. You can double coat by rolling/dipping in egg again and coating with breadcrumbs.
7 Preheat your oil for frying to 350F and then deep fry for about 8 minutes or till golden brown.

Notes: - The sausage meat could be pork, beef or turkey then any range of eggs can be used, from quail eggs to hen to goose to duck eggs.
- In seasoning your sausage, a couple of herbs and spices can be used based on preference. They include: Chilli pepper powder, nutmeg, basil, parsley, ginger, thyme, black pepper etc and depending on whether the sausage has been salted or not, salt can be added.
- In coating, apart from breadcrumbs….a couple of other alternatives are available like: Corn meal, crushed cornflakes and Japanese panko. The most preferred from recommendations is Japanese Panko because it really does deliver that crust finishing.
