This recipe is the fairly standard way of making Nigerian Egg roll which involves deep frying.

Ingredients:
  • 250grams (2 cups) of flour
  • ¼ teaspoon of salt
  • 4 medium boiled eggs
  • 70grams of sugar
  • 50g of margarine, at room temperature
  • 1 teaspoon of mixed spices, optional
  • 1 teaspoon of baking powder
  • 1 tablespoon of milk
  • 1 raw egg, beaten (For Egg Wash) 
  • 125ml of water
Directions: 
  1. 1
    Measure and sift flour in a bowl. Add other dry ingredients like salt, sugar, mixed spices (optional) and baking powder.

    Add butter in bits till it’s exhausted and then rub in well till the dough looks crumbly (like breadcrumbs). Use the tips of your fingers to get the butter well-incorporated and help to achieve the crumbly finish.

    Add your raw beats egg and mix together.

    Dissolve that tablespoon of milk in water and stir to combine. Make a well at the center of your dough mix and in little increments, add your milk mixture and knead thoroughly to get a non-sticky stretchy dough.

    Divide your dough and roll into 4 balls. Flatten out the dough and wrap each egg around the dough. It is advisable to wrap the egg at a time when ready to fry so that the dough still retains its snugness around the egg.

    Preheat your oil for frying and when ready fry your egg roll on medium heat till golden brown all through (evenly).

Ingredients:
  • 500g Of All-Purpose Flour
  • 2 Teaspoon Of Baking Powder
  • 7 medium sized boiled Eggs
  • 200g Of Butter
  • 70g Of Sugar Or Sugar To Taste
  • 200ml Of Milk
  • 1/2 Teaspoon Of Nutmeg
  • 1 Raw Egg beaten (For Egg Wash)
  • 1 Teaspoon of Vanilla paste or any flavouring agent of choice
  • 1 Teaspoon Of Salt or To Taste
Directions:

    With the aid of a sieve, measure and sift your flour into a large bowl. Add your baking powder, ground nutmeg, salt and sugar. Stir all to combine

    Add your butter in little increments and mix thoroughly with either your hands or a whisker till your butter is exhausted. Add milk and any flavouring agent of choice, mix very well to combine.

    Knead your dough but don’t overwork the dough. The consistency should be a stretchy, non-sticky dough.

    After which, cover with a plastic wrap and allow to rest for about 5 minutes. While your dough is resting, break egg into a bowl, add a little milk (optional) and whisk together. Set aside for later use as your egg wash.

    Uncover your dough from the plastic wrap, place on your work surface and divide into four parts.

    Set the rest aside and then pick one of the divided parts and place on your work surface; roll out with a rolling pin and, using a circular object, make a round shape.

    Place your egg into the already shaped dough and wrap around the egg. Repeat step 6 & 7 till all your eggs have been exhausted.

    On a baking sheet, place parchment paper and place your wrapped egg-dough on it. Using a pastry brush, brush your egg rolls with the egg wash mixture.

    Bake at 175c or 375f for 30 to 35mins or till golden brown.
