Ingredients:
  • 1 tuber of water yam
  • ½ of a small red onion, sliced
  • 2 tablespoons of ground crayfish
  • 1 tablespoon of dry pepper or 1 piece of Ata-rodo
  • Salt, to taste
  • Seasoning cube, optional
  • Cooking oil of choice 
Directions: 
  1. 1
    Slice your water yam in big chunks, wash and grate.
  2. 2
    Add your sliced onions, ground crayfish, Ata-rodo or dry pepper, salt and seasoning cube if needed.
  3. 3
    Mix thoroughly to combine all added ingredients.
  4. 4
    Preheat your oil for frying. To know if it’s hot enough, add a little of your mixture to the oil, if it fries immediately then it’s ready and if it floats then wait a little till it’s ready for use.

    Fry in the preheated oil, flip both sides till golden brown.

    Place in a paper towel to drain out oil. Serve with Pap or oatmeal.

  • The level at which water yam draws is dependent on its water content. My mum’s tip to help the water yam draw if it doesn’t is to grate a little bit of okro (a tuber: to one okro).
