By the way, akamu means pap in Igbo language and ogi means pap in Yoruba language as well. And pap is called koko in Hausa language.
Major Pap Ingredient
The major pap ingredient is Fermented Corn Starch.
Fermented Corn Starch is gotten from soaking fresh or dried corn in water for some days (3 days or more), after which you pour out the water, grind the corn to get a corn paste and then sieve using a fine mesh strainer or cheesecloth to separate the starch from the chaff.
You can buy this Fermented Corn Starch ready-made or you can make it yourself at home (which I will be showing you how to shortly).
Note that the colour of the Pap takes on the type of corn used in preparing it. For example
- White pap is gotten from using white corn
- Yellow pap is gotten from using yellow corn
- Brownish pap is gotten from using Guinea corn
- Grey pap is gotten from using millet grains (although the colour varies from straw white, grey, little grey to dull white.)
How to make fermented corn starch at home
Here's the homemade fermented corn starch recipe from scratch.
Prep time: 45 mins
Cook time: 3 - 5 days
Ingredients
10 corn on the cob or dried corn kernels or 1kg of fine cornflour
Enough water for soaking
Directions
Peel corn from the cob or use purchased dry corn kernels. Place in a big bowl that has a lid.
Soak corn in a lot of water, cover and store in a warm place. Allow to ferment till it’s tender (This takes 3 - 5 days). Make sure to change the water every 12 hours.
After 3 - 5 days, drain out water and wash the corn. Blend corn in a heavy duty blender or food processor to get a paste.
Using a fine mesh or cheesecloth, sieve out the chaff from the corn starch.
Allow the cornstarch to sit for another couple of days so that the water comes out and is continually drained out. This gives you a thick mixture and that distinctive sour taste associated with Pap.
Store in a ziplock bag or tie in a nylon bag and store in the fridge for future making of your Pap.

How to Preserve watery Fermented Corn Starch (Without a fridge).
- Pour your watery fermented corn starch into a container with a tight fit lid and cover properly.
- Get another bigger bowl and pour cool water into it.
- Put your covered pap container into the bigger bowl with water
- Every day, change the water in the bigger bowl. This will preserve your watery fermented corn starch for about 2 to 5 days.
How to Preserve Dry Fermented Corn Starch (Without a fridge).
- Put your dry fermented corn starch into a container with a tight fit lid
- Pour some cool water into the container containing the dry fermented corn starch without mixing.
- Cover the container and store it in a cool place
- Every day, replace the water in the fermented corn starch container. This will preserve your dry fermented corn starch for about 14 to 28 days.
