The first is the classic puff puff recipe. While the second is a healthier, less-calorie puff puff recipe ( called "Baked “Puff puff” Muffin)

How To Make Puff Puff Recipe (Classic)

Here's how to make the classic puff puff recipe:

Puff Puff Ingredients:
  • 3 cups (384 grams) of All-purpose flour 
  • 2¼ (2.25) teaspoon of active dry yeast (typically 1 sachet)
  • 2 cups of coconut water
  • ¼ - 1 teaspoon of salt
  • ½ cup of sugar
  • ¼ teaspoon of ground nutmeg
  • 1 teaspoon of chilli pepper
  • Oil enough for deep frying
Directions:

    Get a large bowl to put in your dry ingredient; that is your all-purpose flour.

    In another bowl, mix your dry yeast and allow to proof. It would be creamy and bubbles would form on top.

    Add and stir in your salt and sugar.

    Then, add your yeast mixture into that large bowl containing your flour, then your chilli pepper and ground nutmeg and mix properly till you form a stretchy dough.

    Cover the large bowl with a nylon wrapper and keep in a warm place to rise. That could be for about 40 minutes to 2 hours.

    While your dough is rising, heat up your oil till it’s hot enough to deep fry (you would know this by sampling with a bit of batter into the oil, if it rises then the oil is ready for use) or most preferably heat till it reaches 300 °F.

    Then proceed to fry. To achieve that round shape, you can either use your hands or an ice-cream scooper. Be careful not to over-crowd your pan with too much batter so it doesn’t stick together.

    Deep fry till it turns golden brown on both sides. Remove and drain with a paper towel or place on a sieve.

The beautiful thing about making puff puff is that you can get creative. You can tweak the original recipe to give you whatever you want. For example:

  • Puff-puff can be given a chocolate flavour by adding cocoa powder or Dark chocolate.
  • Cocktails can be incorporated into the preparation of puff puff that gives it a certain taste and inner colour
  • Coconut water can also be used. I’m particularly interested in this and would try this.
  • Banana, plantain, coconut milk, grated coconut can equally be incorporated into the making of puff-puff.

To be honest, the possibilities are endless.

What is Puff Puff ?

Puff puff is simply “Deep-fried dough”. It’s a snack that cuts across most west African countries like Nigeria, Ghana and Cameroon. It’s a recipe that essentially consists of these ingredients: All-purpose flour, yeast, salt, sugar, water and oil for deep fry.

How Do You Reheat Puff Puff?

You can reheat your puff puff using a microwave or an oven. If using an oven, preheat your oven to 200 degrees then place your puff on a baking tray, cover with a thin foil and let it sit for 10 minutes. Take off from the oven. If using a microwave, place your puff on a paper towel (helps to prevent sogginess from the steam) and then heat for about 20 seconds. If you’re not satisfied with the temperature, gradually warm up in 20 seconds increments till it reaches your desired temperature.

This is a guilt-free puff puff recipe that uses oats and wholemeal flour without any sugar and frying (Inspired by  Dooney’s Kitchen).

Ingredients:
  • 1 cup of oatmeal flour
  • ½ cup of wholemeal flour
  • 7g of dry yeast (1 sachet)
  • 3-4 teaspoon of any sweetener of choice (stevia, honey etc)
  • ¼ - ½ cup of warm water
  • Fruit of choice
  • Muffin containers
Directions:

    Get your oats flour by blending your oats and measure a standard cup into a large bowl
  2. 2
    Add the wholemeal flour, yeast and any sweetener of choice.

    Then add water in bits because you might not need as much water. Stir well till there are no lumps.

    Allow to rise. You can leave it in a warm place (like a preheated oven) to make it rise faster. This could take 40 minutes or more.

I’m really big on healthy food and healthy living and so, it was a big issue that “deep frying” is an essential step in the making of puff-puff.

I’m like how do I get to enjoy this snack guilt-free? So, I did my research and stumbled on Dooney’s Kitchen. God bless her (I’m a big fan by the way). On her blog, I read a couple of blog posts on making puff-puff in different ways and I got so excited.


The major reason for my search was to look for a way to tweak puff-puff enough to make it healthy and Dooney suggested “Baked puff muffins” and “oats and wholemeal flour puff-puff”. That was a breakthrough, guyz. Which inspired the above recipe.


The “puff-puff” dough can also be placed on a waffle maker or made like a pancake with little oil to achieve a healthier version.
