Ingredients:
  • ½ cup of popcorn kernels
  • ½ cup of unsalted butter, melted
  • Sweetener of choice (Sugar, Salt, Honey, etc to taste)
Side Note: 

You really cannot go wrong with the flavours you get to infuse into your Popcorn.

The possibilities are simply endless…Well, let me just mention a few of these ingredients you can work with:

  • Parmesan cheese

  • Unsweetened cocoa powder: 

  • Milk

  • Peanut butter

  • Caramel

  • Cayenne pepper

  • Black pepper etc.

Notes: 
  • A top secret to making delightful popcorn is the quality of butter used and quantity used. It literally has the power to make or break the end result of your popcorn.

  • A popular way of eating popcorn way back in the days is with peanuts. Adding peanuts is optional but can be added before baking in step 5 or after for serving.

  • Alternative to a lack of oil is using Ghee (Clarified butter), it has a high smoke point and would deliver in flavours as well. Other options are pork lard etc.

  • To achieve the caramel look and flavour to your popcorn, add 1½ cup of light brown sugar, ⅓ cup of corn syrup, ½ teaspoon of vanilla extract and 1 teaspoon of baking soda to your list of ingredients. In a large pan on medium heat, melt your butter then add your brown sugar and corn syrup. Whisk or mix with a spatula thoroughly till all is dissolved then add your vanilla extract and baking soda. Keep mixing till you get a slightly lighted, thick and fluffy paste. Remove from heat. Then, transfer your already popped popcorn to a baking sheet with a silicone baking mat, pour your caramel mixture over the popcorn and mix well with a spatula to get the popcorn well coated. Preheat the oven to 225F and bake for about 45-60minutes or till crispy. Make sure to check and stir every 15mins interval.
     
  • To achieve the chocolate look and flavour to your popcorn, add 2 tablespoons of unsweetened cocoa powder and ¼ of baking soda to your list of ingredients. In a large pan on medium-low heat, melt your butter, sweetener of choice and cocoa powder then stir till all is dissolved. Remove from heat then stir in your baking powder. Transfer your already popped popcorn to a large bowl, drizzle your chocolate mixture over the popcorn then mix well to combine. Preheat the oven to 250F. Transfer coated popcorn to a rimmed baking sheet (spread it out evenly) and bake for 30-40minutes or till crispy. Make sure to check and stir every 15mins interval.

Ingredients:
  • ½ cup of popcorn kernels
  • ¼ of any cooking oil of choice, optional
  • ½ cup of unsalted butter, melted
  • Sweetener of choice (Sugar, Salt, Honey, etc to taste)

    If you decide to use oil to pop your corn kernels, then in a large pot heat up your oil (to check off it’s hot enough, just add three corn kernels and wait for it to pop. when this happens, remove) then dissolve your sweetener of choice in the oil and add the rest of your corn kernels. Cover the pot but give room for steam to escape through the lid. Allow the corn kernels to pop till it’s all done. You can shake/toss your pot from time to time, so it doesn’t burn.

    Alternatively, you can melt butter in a pot on medium heat, add your sweetener of choice and mix to dissolve. After which, you add your corn kernels. Keep stirring to get the butter and sweetener infused with the corn kernels. Then cover pot and allow to pop till it’s done popping.

    As mentioned above, if you want to add to the flavours with ingredients as mentioned above, you can add now especially if using Parmesan cheese, cayenne pepper or black pepper, peanut butter and milk.

    For further crispness and/or to get the flavours well infused, spread popcorn on a baking sheet then bake on a preheated oven of 325F for 15minutes.
Note
  • In considering your oil of choice, make sure it is neutral in taste and has a high smoking point. For example, grape seed oil etc. Other oils with a high smoking point but not necessarily neutral are Avocado oil, Pure olive oil, Peanut oil etc.

  • All other above notes applies here as well.
