Ingredients:
  • 2 cups of cold heavy cream
  • 1 can (14oz, 396g) of condensed milk
  • ½ tablespoon of vanilla extract
  • A pinch of salt, optional
Directions:

    Measure your cold heavy cream into a large bowl and with the aid of an electric mixer or stand mixer, whisk the cream for about 3 minutes. DO NOT OVER WHISK SO IT DOESNT GIVE THE CONSISTENCY OF A BUTTER.

    Add the condensed milk, vanilla extract and salt if using. Fold into the whipped cream till well incorporated.

    Transfer to an ice-cream bowl or any rectangular shaped bowl enough to contain your mixture, cover with a plastic wrapper and freeze for about 6 hours or overnight.

    Ice-cream is made. Bring out of the freezer, scoop and serve. Enjoy!

Ingredients:
  • 500ml of fresh milk, not evaporated milk
  • 250ml of whipped cream
  • 6 egg yolk
  • 2 tablespoons of vanilla extract
  • 60g of sugar.
Directions:

    In a large pot, measure your fresh milk, whipped cream and vanilla extract. Place on medium heat and stir well to combine.

    While the pot is on medium heat, place your egg yolks in a bowl and whisk then add sugar and whisk to combine well.

    The pot on medium heat might be foaming; when this happens, reduce the heat, wait till there’s no more foaming then add your whisked content into the pot and stir to combine till it’s well incorporated.

    Increase the heat back to medium but keep stirring continuously till you see your solution thickening. This is usually for about 10minutes or better still till you get the thickness preferred.

    Remove from heat, transfer to a bowl and with the aid of ice-cubes, allow to cool down. Keep stirring while it’s cooling till it’s cool completely.

    After which, you place the bowl into the freezer. You bring it out to stir every 30minutes for about 3-5 hours till a very thick, creamy solid is formed.

    You can garnish with fruits, nuts etc. It’s ready to be served. Enjoy!
