Ingredients:
  • 2½ cups of okra
  • 1 tablespoon of locust beans (iru)
  • 2-3 tablespoons of ground crayfish
  • 500g of cooked assorted meat
  • 1 bunch of ugwu leaves
  • 1 smoked fish or any fish of choice
  • 1-2 cooking spoon of palm oil
  • 2 teaspoon of dry pepper/chilli flakes
  • ½ cup of stock or water
  • Seasoning cube to taste
  • Salt to taste
Directions: 
  1. 1
    In a large pot, add your palm oil and let it fry on low-medium heat for 2 minutes.
  2. 2
    Add crayfish and allow to fry for a few seconds then add your chopped/cut okro and stir to combine. Allow to simmer for about 3 minutes.
  3. 3
    Add your stock/water and mix thoroughly. Taste for seasoning and adjust if necessary with seasoning cube(s) and salt.

    Add your beef and smoked fish or any fish of choice then stir. If it’s too thick, add water till you get your desired viscosity. Allow to simmer for a few minutes then add your ugwu leaves

    Let it simmer a little bit more and take off heat.

How to make ILA ALASEPO

Ingredients:
  • 2½ cups of okra
  • 1 tablespoon of locust beans (iru)
  • 2-3 tablespoons of ground crayfish
  • 500g of cooked assorted meat
  • 1 teaspoon of Uziza
  • 1-2 cooking spoon of palm oil
  • 2 teaspoon of dry pepper/chilli flakes
  • ½ cup of stock or water
  • Seasoning cube to taste
  • Salt to taste
  • 3 cooking spoons of Nigerian stew / Stew Base (A mixture of 4 red bell peppers (tatashe) or more, 2-3 scotch bonnet peppers (Ata-rodo) or more and 2 medium tomatoes or more then blend. After blending, you bring to a boil till all the liquid has dried up and you’re left with a paste.)
Directions:

    Either dice, grate, pound or blend your okra.

    If using fresh pepper-tomato blend: in a large pot, add your palm oil and then add your fresh pepper-tomato blend to fry. Allow to fry till the oil bubbles to the top then add your locust beans (iru). Season with your seasoning cube(s), salt and ground crayfish.

    If using your Nigerian stew: In a large pot, heat up oil on low-medium heat then add your locust beans (iru). Allow to cook for a few seconds then add your crayfish. Add your cooking spoons of your Nigerian stew.

    Pour in your assorted meat and smoked fish, stir to combine and allow to simmer for about 2 minutes.

    Add your chopped/blended/pounded okra into the stew base and combine well. Add your dry pepper(optional) and then in little increments, add your stock/meat till you get your desired viscosity.

    Taste for seasoning and adjust if necessary.

    Add your chopped Uziza and stir. Allow to simmer for 2 minutes then take off heat.

  • 3 cups of okra
  • 2 sweet peppers or tatashe
  • 8 medium pieces of beef
  • 1 dry fish
  • 1-2 red onions
  • 1 tablespoon of ground crayfish
  • 1 bunch of ugwu or any green leafy vegetables
  • Yellow habanero pepper to taste
  • Seasoning cube(s) to taste
  • Salt to taste
Directions: 
  1. 1
    Chop your okra in big chunks to avoid the slimy effect. When cut in smaller pieces, there’s that tendency to be slimy. Chop your vegetable of choice as well. Soak your dry fish in water, then debone.

    In a large pot, place your beef on medium heat, season with 1 chopped red onion, seasoning cube(s) and salt adding water to the level of your beef. Cook till it’s tender, by this time the liquid left (stock) would be little.

    In your stock containing your beef, add your ground crayfish, sweet pepper and habanero pepper, remaining onions and chopped okra and allow to simmer for a while. Taste for seasoning and adjust if necessary.
    Add your ugwu or vegetable of choice, allow to simmer for 2mins and take off heat.

  • 2 Cup of Okra (Sliced)
  • 2 Cup Smoked Fish (Shredded)
  • 10 Shrimps (Cleaned)
