How To Make Afia Efere White Soup
Here's how to make the Afia Efere White Soup (sometimes called Calabar white soup or Akwa Ibom white soup)

Ingredients:- 8 medium pieces of chicken
- 2-4 smoked fish
- 2-3 slices of yam
- 1 medium onion
- 2 tablespoons of ground crayfish
- 1 teaspoon of African nutmeg (Ehuru)
- 1 small piece of uyayak (whole or ground)
- 1 tablespoon of dry pepper
- Seasoning cube to taste
- Salt to taste
- 2 liters of water

Directions: 1 In a large pot, place your pieces of chicken, season with salt, 2 seasoning cubes and diced onions then add water to reach the level of the chicken and in medium heat, bring to a boil till it’s tender.
2 In another pot, boil your pieces of yam and when soft, pound to give Pounded yam that serves as the thickener and set aside. You can either use a food processor or mortar and pestle for this step.
3 In the pot containing your chicken, add your ground crayfish, dry pepper, African/calabar nutmeg and uyayak.
4 Allow to simmer for about 3-5minutes and then taste for seasoning (adjust if necessary). Cut your Pounded yam into small balls and add to the soup to thicken the consistency. N.B: if it’s too thick, you can add more water.
5 Bring to a boil and stir. Allow the yam dough/ pounded yam to dissolve completely into the soup then add your fish.
6 Reduce the heat and simmer for about 5-10 minutes. 7 Take off heat and serve with pounded yam.

Notes: - Other thickeners can still be used like cocoyam paste, ground oats, mashed Irish potatoes but the gold standard thickener is Yam.
- The difference between Afia Efere White Soup and Ofe Nsala White Soup is that Ofe Nsala does not use Uyayak (Aidan fruit) and adds Uziza seeds, Uda, Ogiri, Utazi or Uziza leaves to the soup.
