How to make Jollof Spaghetti

Jollof Spaghetti, just like jollof rice is spaghetti cooked in tomato sauce.

Ingredients:
  • 4 plum tomatoes or 1 tin of plum tomatoes
  •  4 red bell peppers
  • 3 scotch bonnet pepper, or according to preference 

  • 1 ½ of large red onion

  • 3 cloves of garlic

  • 1 tbsp of fresh ginger

  • 1 cup of chicken stock

  • 1 tbsp of curry

  • 1 tbsp of thyme

  • Seasoning cube, as needed

  • 1 pack of spaghetti 

  • 1 tbsp of butter or olive oil 

  • 1 cup of mixed vegetables

  • 3 tbsp of tomato paste

  • 600g of chicken breast or any protein of choice

  • 1½ tablespoon of yogurt with bacteria culture in it (e.g. Habib yogurt contains D.V.S culture)
Directions: 
  1. 1
    For the stew base (pepper mix), you can either:
    Blend your plum tomatoes, red bell peppers, 1 large onion, 3 scotch bonnet peppers, garlic and ginger. Then, boil the blended mixture on medium - high heat till the water is reduced and has thickened significantly to look like a paste; this should take about 20 minutes if placed on high heat.
     OR
    - Cut your tomatoes, peppers, onions, garlic and ginger. Season with a little olive oil and salt. Place in a pan and roast in a preheated oven of 350C for 20 minutes. Blend after

    Once hot, remove boiled milk from heat and allow to cool down until it's warm.

    Transfer warm milk into a glass bowl or container (don't use stainless steel because metals can interfere with the bacteria culture in the yogurt)

    Add in your 1½ tablespoons of yogurt with bacteria culture (e.g. Habib yogurt)

    Cover properly with a kitchen towel and keep in a warm place for 6 to 12 hours (or preferably overnight)

    Lastly, put the white firm custard looking yogurt into a cheesecloth (or clean t-shirt or scarf) with a bowl underneath. And allow the excess liquid (whey) to drain out of the yogurt.
    NB: This draining process will take a couple of hours, so it better to transfer it into the fridge.

    Once the yogurt reaches the consistency you're okay with, then it's ready to be served.

Ingredients:
  • 1 pack of spaghetti
  •  1 cup of diced carrots
  • 1 cup of red bell peppers
  • 1 cup of green pepper
  • 1½ cups of diced fresh tomatoes
  • 1 cup of already cooked goat meat or any protein of choice
  • 1 white onion, diced
  • 1 tablespoon of garlic
  • 1 tablespoon of ginger
  • 1 tablespoon of olive oil
  • Black pepper, to taste
  • Seasoning cube, to taste
  • Salt, to taste
  • 1 tablespoon of curry
  • 1 tablespoon of thyme 
Directions: 
  1. 1
    Put water into a pan and place on medium heat. Season with salt and a little oil and allow to boil.
  2. 2
    Add a pack of spaghetti into the boiling water and allow to cook for about 8 -10 minutes or till al dente (chewy, not completely soft).
  3. 3
    Drain the spaghetti out of the pasta water and run through cold water. Reserve a cup of this pasta water for later use.

    Heat up oil in a pan and sauté onions till translucent
  5. 5
    Add diced red bell peppers, carrots, green pepper, fresh tomatoes and goat meat
  6. 6
    Season with stock cubes, curry, thyme, black pepper, ginger powder, garlic powder and mix well. Allow to sizzle for a bit.

    Add the spaghetti into the mixed vegetable in bits and mix well to get it well incorporated till all the spaghetti has been mixed together. Allow to simmer on low heat for about 5 minutes or till done to taste.

Ingredients:

    Add a pack of spaghetti and allow to cook for about 8 - 10 minutes. Drain out the water from the spaghetti using a colander (sieve). Set aside.

    Heat up oil in a pan and sauté onions till it’s translucent.

    Add your pepper mix (as described above), tomato paste and chicken stock. Mix well and allow to fry for about 5 minutes.

    Taste for seasoning and adjust with seasoning cube(s) if needed. Add curry and thyme.

    Add spaghetti into the mixture and mix well for the sauce to get into the spaghetti.
    Fry (stirring occasionally) for about 3 - 5 minutes. And it’s done! Enjoy

Ingredients:
  • 1½ tablespoon of olive oil
  • 1 pack of spaghetti
  • Tomato and pepper mix (see below)
  • 1 sachet of tomato paste
  • 1 pound of ground beef
  • 1 cup of pasta water
  • 2 tablespoons of chopped onions
  • 1 teaspoon of chopped garlic
  • Grated Parmesan cheese, optional
  • 1 tablespoon of curry
  • 1 tablespoon of thyme
  • 1 teaspoon of black pepper
  • Seasoning cube, to taste
  • Salt, to taste
Directions: 
  1. 1
    For the stew base (pepper mix), you can either:

    Add pepper mix, tomato paste and the reserved pasta water. Stir to mix and allow to cook for another 5 minutes.

    Check for seasoning and adjust with seasoning cube(s) if needed.
    Add a little more water (optional), if necessary and then add cheese. Stir well to combine. Allow to simmer for about 3 - 5 minutes then take off heat.
