Ingredients:
  • ¼ cup of ground ogbono (wild mango seeds)
  • Ugwu leaves/ Uziza 
  • 8 medium pieces of cooked beef
  • 1 smoked fish
  • 2 cooking spoons of palm oil
  • 2-3 tablespoons of ground crayfish
  • 1 tablespoon of dry/chili powder
  • 1½ liters of water/stock
  • Salt to taste 
Directions: 
  1. 1
    In a pot, pour your palm oil and place on medium heat.
  2. 2
    Melt the ogbono in the hot oil and stir to prevent lumps, add water or stock and stir.
  3. 3
    Add your meat, water/stock and stir. Don’t cover the pot to prevent losing its resilience.
  4. 4
    Add your ground crayfish, chili powder, salt to taste if needed, washed smoked fish into the pot and stir to combine.

    Then, add your shredded ugwu leaves, allow to simmer for about 5 minutes and remove from heat.

Ingredients:
  • ¼ cup of ground ogbono (wild mango seeds)
  • Ugwu leaves/ Uziza 
  • 8 medium pieces of cooked beef
  • 1 smoked fish
  • 2 cooking spoons of palm oil
  • 2-3 tablespoons of ground crayfish
  • 1 tablespoon of dry/chili powder
  • 1½ liters of water/stock
  • Salt to taste 
Directions: 
  1. 1
    In a large pot, place your assorted meats on medium heat then add enough water to reach the level of your meat and allow to cook till it’s almost tender. Season with your seasoning cube(s), salt, chili pepper.
  2. 2
    When almost tender, add your palm oil and allow to boil till the oil is well combined with the stock. Add your ground crayfish and stir to combine.
  3. 3
    Then in little increments, add your ground ogbono seeds and mix thoroughly to prevent lumps from forming. Let it cook for 20mins. If it’s too thick, you can adjust by adding more water till you get your desired consistency.

    Taste for seasoning and adjust if necessary. Add your green vegetable of choice (in my case, ugwu leaves), stir to combine. Cook for another 2 minutes then take off heat.

Ingredients:
  • ¼ cup ofpre-cooked Egusi soup or 3 cups of Egusi seeds
  • 1 cup of Ground ogbono
  • Fresh pepper mix or left-over stew
  • Fresh green vegetable, e.g Bitterleaf, Ugu, Utazi etc 
  • 500g of Assorted meat e.g cow tripe (Shaki), cow skin (Ponmo), beef etc.
  • 1 smoked fish
  • 3 tablespoons of ground crayfish
  • 2-3 cooking spoons of palm oil
  • Salt to taste
  • Seasoning cube(s) to taste
  • Chili/spicy pepper powder to taste (optional)
  • Water/stock
Directions (Cooking Egusi From Scratch): 
  1. 1
    In a large pot, place your assorted meat with water enough to reach the level of the meat, on medium heat and cook till it’s tender. Soak your smoked fish in hot water and remove all dirt.
  2. 2
    If cooking from scratch, place two pots on your burner. In one pot, add your beef stock and allow to boil then add 1 cooking spoon of palm oil. Allow to simmer for about 7minutes before you add your ground ogbono. Mix thoroughly to prevent lumps formation. Allow to cook for another 20mins.
  3. 3
    In your other pot, heat up your remaining palm oil and then add your ground Egusi seeds. Stir well to avoid it from burning then add enough water and allow to cook for about 10minutes. Alternatively, you can divide your beef stock, allow it to boil then add your ground Egusi, let it cook for 10mins before adding palm oil.

    Add your ground crayfish, fresh pepper mix, chili powder (optional). Taste for seasoning and add seasoning cube(s), salt if needed. Stir to combine then add your shredded Bitter Leaf in the quantity you’re most comfortable with then allow to cook for another 10mins. Transfer your ogbono into your pot containing Egusi soup and stir to combine. Add your cooked assorted meat and smoked fish. Taste for seasoning and adjust if necessary.

    Take off heat and serve
Directions (Using Old/ Already Cooked Egusi soup): 
  1. 1
    Add your old Egusi soup into a pot, add enough water as you would like the volume to be then season with ground crayfish, salt and seasoning cubes. Allow to boil for about 5 minutes then add your fresh pepper mix or left-over stew (whichever one you have available), allow to simmer for about 10mins.

    If satisfied with the taste, in little increments add your ground ogbono into the pot and stir to combine. If too thick for you, add a little hot water till you get your desired consistency. Add your assorted meats and smoked fish. Taste for seasoning and adjust if necessary.

    Add your choice of green vegetables in the quantity you want it to be. Allow to simmer for just a couple of minutes

  • ¼ Ground Ogbono seeds
  • 2 Cups of Chopped Okra
  • 1 kg of Pre-cooked Meat
  • Stock fish and dry fish (optional)
  • 2 medium-size of fresh pepper
  • 2 cooking spoon of Palm oil
  • 1 bunch of Fresh green vegetable, e.g Bitterleaf, Ugu, Utazi etc
  • 1 handful ground crayfish
  • 1 medium onion
  • 2 Seasoning Cube (e.g Maggi)
  • Salt to taste
Directions (Cooking Egusi From Scratch): 
  1. 1
    In a clean pot, pour in your palm oil and place on low heat.

    Using a cooking stick, stir in your ground ogbono into the oil until all your ogbono powder has dissolved and is completed mixed with the oil.

    Slowly add in your meat stock/water and continue to stir until you notice your ogbono starts to draw and thickens to your desired consistency.

    Allow ogbono to cook for about another 10 minutes, stirring intermittently to prevent the ogbono from sticking to the bottom of the pot and burning.

    Then add in your meat, pepper, ground crayfish and salt to taste. Stir to combine everything.

    Add in your chopped okra and stir thoroughly. Cover Pot and allow to simmer for about 2 to 3 minutes.

    Finally, add in your chopped vegetable of choice and allow to simmer for about 5 minutes.

Ingredients:
  • ¼ Ground Ogbono seeds
  • 1 kg of Meat
  • Smoked Fish
  • 1 Tablespoon Ground pepper
  • 1 bunch of Chopped Vegetable of Choice (Ugu, Pumpkin leaves, spinach or better leaf)
  • 1 handful ground crayfish
  • 2 Seasoning Cube (e.g Maggi)
  • Salt to taste
Directions 
  1. 1
    Pour about 3 cups of water in a pot and add your beef, smoked fish, 1 Seasoning Cube (Maggi) and salt to taste. And cook on medium to high heat for about 30 mins or until meat is done.

    Put dried Ogbono in a separate bowl and add in 2 cooking spoon of meat broth (i.e meat stock from above step). And Whisk until completely smooth.

    Add the Ogbono paste and remaining ingredients (pepper, Maggi, crayfish, and vegetable) into the meat broth.

    Stir the mixture thoroughly using a whisk 

    (Note: The whisk makes the mixing way easier, which prevents lumps)
